Heart Healthy Spinach Boboli
1 medium onion, sliced
6 oz fresh mushrooms
1 pkg fresh spinach
1 clove garlic, minced
1/2 Cup Fat-free ricotta
4 oz fat-free or low-fat mozzarella
1/4 cup chopped fresh basil or 1 Tbsp dry basil
2 tsp fresh oregano or 1 tsp dried
salt and pepper to taste
1 Tbsp olive oil
 
Heat olive oil in non-stick skillet. Add onion, sauté 5 min. Add mushrooms and garlic, sauté 3 min. Add spinach, basil, and oregano, sauté 2-3 min. Season with salt and pepper. Spread vegetable mixture evenly over whole-wheat Boboli. Drop heaping teaspoons of ricotta evenly over vegetables. Sprinkle with mozzarella.

Cook Time: 8 minutes

Temperature: 450° F
